The Jerusalem artichoke (Helianthus tuberosus), also called the sunroot or sunchoke or topinambur, is a species of sunflower native to eastern North America. It is also cultivated widely across the temperate world for its tuber, which is used as a root vegetable.
Topinambur was cultivated by the Indians in ancient times and has been cultivated in Central Europe for the last 300 years.
The topinambur root which has a pleasant nutty taste consists of 40 % inulin, and carbohydrate that cannot be digested.
